esure's Easter biscuits

You will need:

For the biscuits:

  • 100g unsalted butter, softened at room temperature
  • 100g caster sugar
  • 1 medium egg, lightly beaten
  • 275g plain flour
  • 1 tsp vanilla extract

For the decoration:

  • 400g Royal Icing sugar
  • 3-4 tablespoons cold water
  • A pack of your favourite coloured writing icing
  • Any sprinkles, silver balls, or other decorations you fancy!

Equipment:

  • Two baking sheets
  • Greaseproof paper
  • A big mixing bowl
  • A smaller mixing bowl (for the icing)
  • An electric hand whisk or a food mixer
  • A rolling pin
  • Biscuit cutters in the shape of your choice
  • Measuring spoons

Baking The Biscuits

  1. Preheat your oven to 190°C (Gas Mark 5).  Line the baking trays with sheets of greaseproof paper
  2. Put the butter and sugar in the big mixing bowl and cream together until smooth using your hand whisk or food mixer
  3. Gradually add the egg and vanilla extract, mixing on a medium speed as you go, until it’s all combined
  4. Stir in the flour until the mixture forms a dough
  5. Dust the kitchen surface with some flour to stop the dough from sticking, and roll out the dough until it’s about 1cm thick
  6. Using your cutters, cut out as many biscuits as you can from the dough.  Carefully place the biscuits onto the greaseproof-lined baking trays
  7. Pop the biscuits in the oven and bake for 8-10 minutes until they’re a light golden brown
  8. Leave to harden on the trays for five minutes, then carefully take the biscuits off the baking trays and leave to cool on wire racks

Decorating The Biscuits

Once the biscuits are completely cool, you can decorate them

  1. Put the icing sugar in the smaller mixing bowl and make a well in the middle.  Mix in the cold water a little bit at a time until you have a smooth, not too thin mixture
  2. Spoon some icing onto each biscuit and use the back of the spoon to spread it across the whole biscuit, so you get a nice, even covering
  3. Set the biscuits aside until this base coating of icing is just getting firm
  4. Add whatever decoration you fancy!  Use writing icing to make patterns, add sprinkles for some more colour, silver balls and some glitter for a touch of bling – let your imagination run wild!
